We grilled a turkey breast this weekend, and ended up with quite a bit of leftover turkey. In an attempt to fit in at least one healthy meal this week, we made Turkey Pitas with Yogurt Cucumber Sauce:
Yogurt Cucumber Sauce:
- Fat Free Yogurt
- 1 small cucumber – diced
- lots of chopped garlic
- lots of chopped dill
- salt and pepper
Turkey mixture:
- Turkey, chopped
- scallions, chopped
- baby greens
- olive oil
- parmesan cheese
Combine all yogurt sauce ingredients. Mix and refrigerate for 24 hours or more.
Combine all turkey mixture ingredients. Stuff in warmed pitas, with yogurt sauce on top.
