Southwestern Grilled Sirloin with Black Bean Salsa

Black Bean Salsa:

  • 1 Can Southwestern-seasoned black beans
  • 2 Large tomatoes, chopped
  • 1 Red pepper – chopped
  • 1 Jalepeno pepper – chopped
  • 1 bunch scallions – chopped (bulbs and greens)
  • 2 Tb garlic (chopped)
  • 1 Small bunch cilantro, chopped
  • Olive Oil
  • Cumin, Salt, Pepper – to taste
  • Combine all ingredients. Add olive oil to desired consistency. Let sit at room temperature for 4 hours to maximize texture, flavor.

    Sirloin:

    Marinade in favorite southwestern marinade mix for 2+ hours (I use Southwest Chipotle Marinade by Chef Paul Prudhomme). Grill to taste.
