Pesto

Pesto is one of my favorite flavors. I love fresh basil, and when you combine it with a good olive oil, pine nuts and parmesan cheese, you can’t really beat it.

A request has been made for my pesto recipe. The only problem is that I don’t have precise quantities for pesto-making. As I make the pesto I start with the amount of basil I have on hand, then I add the other ingredients until everything is the right consistency. But I’ll still give it a shot!

Ingredients:

  • 2 cups fresh basil leaves, packed
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup Olive oil
  • 3 tablespoons pine nuts (if you can’t find pine nuts, you can use walnuts - but pine nuts are so much better in pesto!
  • 3 garlic cloves
  • Place basil in a food processor, adding a little at a time, and prcess until finely chopped. Add half of the pine nuts and continue to process. Add half the cheese and process until all ingredients are well chopped.

    With the processor running, add half of the olive oil a little at a time. A paste will start to form. Continue to run the processor and again add each of the rest of the ingredients until finished.

    When finished, you should have a thick, smooth paste. Add more olive oil if needed to reach the desired consistency.

    This freezes great! If you have lots of basil, make lots of pesto and freeze it in small amounts in plastic ziploc bags.
