Drowning in fresh mint!

I have tons of fresh mint that I got from my CSA, and I just don’t have a clue what to do with it.

I’m not really a jelly person, and I’m not really a lamb person, so that pretty much eliminates the lamb with mint jelly option!

So far, I’ve simply added it to some fresh, cut up strawberries. And, out of sheer desperation I took a bunch of the same strawberries, added lots and lots of mint, mashed it all up, and steeped it in rum.

I’ll let it sit for a few weeks and strain it. We’ll see how it turns out.

Anyone else have any other ideas? I have probably 4 cups of mint leaves left!

How about mojitos or Chicken Salad with Nectarines in Mint Vinaigrette (the recipe is about half-way down the page). I’ve made the chicken salad with nectarines and with cantaloupe and it’s really good both ways – and it uses a cup of mint! I think the vinaigrette would be nice on a fruit salad too.

The mojito is a must! And you are right, the fruit salad sounds great.

Well, guess there’s nothing else to be done but start drinking mint juleps. Put on a floppy hat and sit out on the verandah!

Ice Cream. Or tea. Or maybe a mint/fennel mixture to stuff a fish or use as a sauce?

I really thought about the ice cream. I don’t have an ice cream maker and was tempted to buy one just for this, but I feared it would become another unused small appliance along with my bread maker and my pasta maker.

I’m still tempted, though ;->
