Chicken Chili

It was cold today! August 11 and the high was 59 degrees. So I scrapped plans to sautee some fresh veggies with chicken breasts (far too summer-like), and I went with a quick chili with the same chicken breasts and cornbread on the side instead.

Now, some may argue that it wasn’t truly chili because it was prepared too quickly and didn’t spend enough time blending all the flavors. Some may be right. Oh well! It was fast and simple and hearty on a cold summer day!


Ingredients:

1 onion, chopped
1 pepper, chopped
2 chicken breasts, diced
Garlic
2 cans assorted spiced chili beans
1 small can salsa

Sautee onion and pepper. Add chicken breast and sautee briefly. Add garlic, beans and salsa. Cook for a while, and eat.
