Chicken and Risotto
As I mentioned in my previous blog, I was stumped for dinner tonight. Lacking creativity, I perused the food blogging community, looking for inspiration. Two things struck my fancy.
First, MeatHenge’s Chicken Pieces with a Sprig of Bacon looked great the first time I saw it, and it seemed like just the thing. I wasn’t feeling so great, and this looked simple, filling, and rich. And it was! I had some Nueske’s bacon which is some of the greatest bacon I’ve found, and I knew it would give it just the right smoky flavor. I also made some minor modifications, including a mustard gravy to serve on the side. All in all, it was just what I was looking for.
The second thing look really great - but I just didn’t have the energy to pull it off. Barrett at Too Many Chefs had posted a Risotto Torte that looked unbelievable. But as the bug that I’ve come down with settled in, I decided that I just didn’t have the energy to whip up the egg whites, and so I settled for a more simple Pancetta, Pea and Leak Risotto instead. Rest assured, I will be trying the torte very soon.
