Pepper and Olive Braised Pork with Potatoes
Olive Oil
1 lb pork shoulder, cut into cubes
1 red pepper, cut in strips
1 green pepper, cut in strips
1 onion, cut in strips
1 Tomato, diced in chunks
2 carrots, cut
1 T. garlic
Assortment of Greek olives
1 cup red wine
Chicken stock, as needed
1 sprig fresh thyme
Chopped dill
Salt and pepper to taste
Very small new potatoes
Preheat oven to 225.
Sautee pork cubes til lightly brown in olive oil. Add peppers, onion, carrots and sautee for 4 minutes. Add tomato, garlic, olives and stir. Add red wine, then add stock til mixture is moist. Add Fresh thyme, dill, salt and pepper.
Bake 1 1/2 hours.
Add potatoes to mixture. Bake another 1 1/2 hours.

Gorgeous photo again, and the recipe looks so unbelievably simple. I love both pork and olive, but never thought of combining them before.
